How to manipulate the Subject NameID format in Azure for xMatters SSO

Question 

When setting up Azure for SSO to xMatters, the claim may be sending the subject nameID in one format (like SAMAccountName) when another format like e-mail would be more desired based on how either the xMatters user ID or weblogin ID is configured. Where do I change that in Azure?
